For road I run 130/130 height (set with 50% fuel and driver in seat). Damping F-8 and R-11.
For track (it depends on the track), but typically 130/132 height (set with 50% fuel and driver in seat). Damping start on max F-20 and R-20 and reduce an axle depending on specific car characteristics on specific track/weather/tyres/temperature/etc.
